It’s time for Karen’s Killer Fixin’s!

Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. Every Friday, I share a recipe that I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author’s favorite. It could be a cookie or a baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is SESAME SEED CATFISH FILLETS from KAREN’S KITCHEN!!

To be truthful, I’m not much for fish that has a strong fishy taste, which is why catfish is one of my favorites. It’s mild and has a “meaty” texture that takes spices well, whether you bake it in the oven, char it on the grill, or fry it in a skillet. When sesame seeds are toasted it adds a nutty taste that’s perfect for catfish.

SESAME SEED CATFISH FILLETS
[Makes 4 Servings]
[From Karen’s Kitchen]

8 3-1/2 oz. catfish fillets
1-1/2 cups breadcrumbs
1/3 cup sesame seeds
1 T. minced fresh parsley
1/2 cup flour
salt and pepper to taste
2 eggs, beaten to blend
1/4 cup vegetable oil
10 tsp. oriental sesame oil

Preheat oven to 350 degrees. Grease baking pan. Mix breadcrumbs, sesame seeds, and parsley on a large plate. Mix flour, salt, and pepper on another plate.

Dip fillets in the flour mixture, then the beaten egg. Roll in the breadcrumb mixture, coating completely.

Heat vegetable oil and 2 tsp. sesame oil in a large heavy skillet over high heat.

Add fish in batches. Do not crowd. Cook 1 minute on each side.

Transfer catfish to prepared pan. Bake in the oven until catfish is just opaque, about 10 minutes.

Transfer to a heated plate. Heat remaining 8 tsp. sesame oil in a small heavy saucepan until almost smoking. Pour over catfish and serve immediately.
