Karen’s Killer Fixin’s: GINGER CIDER PORK CHOPS & CARROTS #Recipe from Karen’s Kitchen

It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is GINGER CIDER PORK CHOPS & CARROTS !

When I went searching through my binders, I came across this old recipe that I haven’t made in forever. I have to fix that, just as soon as the current kitchen renovation is finished. This is a wonderful, savory way to make pork chops. It makes a great dish anytime, but I especially like it in the fall when I’m thinking of fresh produce and apple cider. I WILL be making this long before fall though, now that I’ve been reminded of the recipe.

GINGER CIDER PORK CHOPS & CARROTS
[Serves 4] 

Ingredients: 

4 rib pork chops, ½-inch thick (@1-¾ lbs)
¾ tsp. salt
¼ tsp. black pepper
1 T. vegetable oil
1 tsp. ground ginger
1-¼ cup apple cide
1 bag (12 oz.) fresh baby carrots
1 T. flour 

Directions: 

  1. Season pork chops with ½ tsp of the salt and pepper.
  2. Saute chops in oil in skillet until browned @3 minutes per side. Remove to platter; keep warm. Drain drippings from skillet.
  3. Add ginger and remaining salt to skillet. Pour in ¾ cup apple cider. Heat to boiling. Add carrots; return to boiling. Reduce heat to medium; cook 6 minutes until carrots are tendeer.
  4. Whisk flour and remaining ½ cup apple cider in small bowl. Add to carrot mixture; cook, stirring constantly for 2-3 minutes or until thickened. Return chops to skillet; heat through.

  2. This does sound delicious. I miss being able to get fresh cider from the press. It is so much better than the processed version you have to buy now. This recipe combines some favorite ingredients. Will be trying it soon.
