It’s time for Karen’s Killer Fixin’s!

Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. Every Friday, I share a recipe that I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author’s favorite. It could be a cookie or a baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is WILD RICE SIDE DISH from KAREN’S KITCHEN!!

Today I’m sharing a recipe that won’t heat up your kitchen too much and can be eaten hot or cold. You can add meat to it and make it a one-pot supper, if you like, but it also makes a fun side dish.

WILD RICE SIDE DISH
[From Karen’s Kitchen]

2 cups cooked wild rice
Chopped carrots
Chopped celery
Chopped onion
Minced garlic
Chicken-style Seasoning *

In a frying pan, sauté the chopped carrots, celery, onion, and garlic. Sprinkle 1 tsp.  Chicken-style seasoning over the vegetables.

Then add 2 cups cooked wild rice. Sprinkle 1 tsp. of the chicken-style seasoning again, stirring the vegetables and wild rice.

*Any seasoning you typically sprinkle on your chicken. It could be something like rotisserie chicken seasoning, Chinese herbs, or anything that sounds good. I’ve been known to occasionally use my Greek seasoning, Herbs de Provence, etc.

NOTE: To make this a one-pot supper, throw in some cooked chicken or shrimp chunks. If you want to go with beef, maybe use seasoning you’d normally put on steak. Get creative!

This recipe is good hot or cold.
