It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is EASY SHRIMP SCAMPI!

As I’ve mentioned before (more than once or twice 🙂 ), I love seafood. I can’t get enough, especially if it’s shrimp. When looking back over the nearly 690 recipes I’ve shared over the years, I’m amazed I haven’t shared this one recipe. It’s so easy to make and, for so many of us who love shrimp, this is a “go to” meal at seafood restaurants. Add a hot bread and a salad and you don’t even have to go out to a restaurant to enjoy a spectacularly enjoyable meal, at a fraction of the cost.

EASY SHRIMP SCAMPI
[Serves 4]

3/4 cup unsalted butter
1/4 cup chopped onion
3-4 garlic clove, crushed
4 parsley sprigs, chopped
1 lb. uncooked medium shrimp, shelled & deveined
1/4 cup dry white wine
2 T. fresh lemon juice
salt and pepper

Melt butter in medium skillet over low heat. Add onion, garlic and parsley. Saute about 10 minutes. Add shrimp and stir until pink. Remove shrimp and place in ovenproof dish. Cover lightly and keep warm. Add wine and lemon juice to skillet and simmer 2-3 minutes. Season to taste with salt and pepper and pour over shrimp.

NOTE: It says this is four servings but, if you love shrimp as much as we do in our household, you might double up this recipe to make sure everyone gets some if you’re serving four people. Yeah, I know….delicate piggy snort. 🙂

  1. Yum. I love shrimp, but don’t drink wine, so will have to substitue something else for that. Thanks for the recipe.

    1. Is it that you don’t drink wine so you don’t have the little bit you’d need for the recipe, or you don’t drink wine at all? Cooked, the liquor IS cooked off. Anyway, if it’s a matter of not wanting to buy a whole bottle of wine for a single use like this, you can pick up little sample bottles that would take care of cooking needs. I don’t drink wine either. I do, however, cook some things with it. Anyway, just a thought.
