It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is MICROWAVE CHEESY SCALLOP POTATOES!
I don’t know about you, but I love scalloped potatoes. With cheese? YUM! However, we all know how long it can take to make up a batch. I found this recipe years ago and it’s just right for a “quick and dirty” version when you’re in the mood, but short on time. Add some chunks of ham to the potatoes in the last couple of minutes and you’ve got a savory and filling meal.

MICROWAVE CHEESY SCALLOPED POTATOES
¾ cup milk
1 can cream of chicken soup
4 cups sliced potatoes (starch rinsed off)
1 cup shredded cheese
¼ cup chopped onion
½ tsp. salt
Gradually stir milk into soup in 2-quart casserole. Stir in remaining ingredients. Cover tightly and microwave on high 10 minutes; stir. Cover and microwave until tender, 10-15 minutes longer. Stir. Sprinkle with Parmesan cheese and serve.
NOTE: If you want ham and cheese scallop potatoes, stir in chopped ham in the final 2-3 minutes so it just heats up with the potatoes. It will dry out if added at the beginning. You can also change out the cheese selection or spices. Rosemary Scallop Potatoes, anyone, for instance?
