Karen’s Killer Fixin’s: Chili Chicken Over Rice

It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe. A cookie or baked item. Candy. Salads. Whatever strikes my eye and fancy…which today is CHILI CHICKEN OVER RICE!

I’m always looking for different ways to make chicken. We love it and it’s the least expensive meat these days. (Whatever happened to hamburger as the “savings” meat?!) Anyhoo, I got creative one night and dinner was such a hit, the recipe has found a permanent home in my cookbook. I make it often. If you love easy and savory, this recipe’s for you. Keep the supplies in your pantry and it’s a great, last minute meal.

Karen’s Killer Fixin’s: Chocolate Mint Cookies

It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. Do you know what’s even better than mint cookies? Double mint cookies with frosting! My favorite Girl Scout cookies are the mint but, unless you have Girl Scouts on tap year round, that craving can grow to monumental proportions. These double cookies can be made anytime. Yeah, takes a bit more work but WORTH THE TROUBLE!!

I don’t have nearly enough fish recipes now that I’m looking for healthier dinner options but I do have a few to share. This is a wonderful, flavorful way to cook something quick and different. Very tasty!

Karen’s Killer Fixin’s: Four-Peppercorn Steak

I was never much for huge pepper flavors until I had a peppercorn steak at my favorite German restaurant when I was a teenager. I loved it so much I’d order it every time we went there. Alas, they closed down and I was forced to find a close facsimile of the flavors. This recipe isn’t exactly like the steak I remember but it makes my taste buds happy when I’m craving peppercorn steak.

I don’t know about you but I make a lot of soups during the winter months. It’s great comfort food when you’re fighting off the cold and so easy to throw together in one pot. I have been known to make chicken noodle soup completely from scratch but, sometimes, it’s great to do a quickie version. That is the version I wanted to share with you today.

One of the things I love about the holidays are all of the special recipes family and friends pull out for those holiday meals and parties. A lot of seafood goes on sale at this time of the year, too. I love seafood of all kinds, especially crabcakes. Today’s recipe is something you can make quickly for your guests, a taste of the sea and a nice complement to other party dishes.

Karen’s Killer Fixin’s: Crockpot Pot Roast Italiano

I love the fall because I can pull out some of my recipes I only seem to make in cooler weather. If I can toss it into a crockpot and leave it? Even better! Everyone has their favorite pot roast dinner. But, if you want to try a new variation, you might like to try this “Italiano” version. It goes great with mashed potatoes or noodles.

I’ve always loved Mounds (and Almond Joy) candy bars so it’s only fitting I also have a wonderful coconut cookie recipe. Making these cookies is a breeze and the end result is scrumptious! Add chocolate and/or almonds and you can recreate the candy bar flavors. A three-in-one cookie recipe!
