It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. Whatever strikes the eye and fancy…which today is TANDOORI-STYLE CHICKEN from KAREN’S KITCHEN!!
If you love Indian cuisine and enjoy the spicy and flavorful Tandoori chicken, you’re going to love this recipe. You do need to plan a little ahead since it needs to marinate overnight, but the actual preparation at dinnertime is so quick and easy. Add some basmati rice and grilled veggies and you have a wonderful, filling, and healthy meal for the family!

TANDOORI-STYLE CHICKEN
[From Karen’s Kitchen]
[4 Servings]
5 garlic cloves
1-inch cube peeled ginger
1 medium onion, cut in 8 wedges
1/2 tsp. ground pepper
1/2 tsp. salt (optional)
1/4 tsp. cardamom
1 cup plain low-fat yogurt
1/4 tsp. grated nutmeg
3 T. lemon juice
1/4 tsp. ground cloves
1 T. olive oil
1/4 tsp. cinnamon
2 tsp. ground coriander
1/4 tsp. cayenne pepper
1 tsp. cumin
1 tsp. tumeric
8 chicken pieces, skinned
Mince garlic in food processor. Add ginger and mince. Add onion and mince. Add next 13 ingredients and puree. Transfer to bowl.
Cut deep slashes in chicken pieces. Add to marinade, turning to cover well. Cover. Refrigerate overnight.
Preheat broiler*. Generously butter broiler pan and large shallow ovenproof glass baking dish.
Arrange chicken on broiler pan and broil about 3-inches from heat source, 5 minutes per side.
Reduce oven temperature to 325 degrees. Transfer chicken to prepared baking dish. Bake until juices run clear, basting frequently with marinade, about 20-25 minutes.
Note: You can serve this with basmati rice and/or grilled vegetables for a healthy meal.
*For that added smoky flavor, use a grill instead of the broiler for the first part of the cooking process. Then, finish it off in the oven.
