It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is GRILLED SHRIMP from KAREN’S KITCHEN!!

For all of you who’ve been following this blog for awhile, you know I could eat shrimp almost every day of the week. It truly is my favorite food. I do have a number of shrimp recipes to provide me with variety. The neat thing about this one recipe is that it only makes two servings. It’s often tough to find 2 serving recipes. This one is perfect for the empty nesters. Of course, it’s great for single servings, too. Leftovers can be chopped up into a salad the next day!

GRILLED SHRIMP
[From Karen’s Kitchen]
[2 Servings]

1/2 cup dry breadcrumbs
salt and pepper
1/3 cup olive oil
1 garlic clove, minced
1 T. minced fresh parsley
1-1/2 tsp. chopped fresh basil
1 lb. uncooked large shrimp, (15 or less), shelled & deveined

Combine first five ingredients with salt and pepper to taste. Pat generous amount onto each shrimp. Cover and refrigerate at least 2 hours, preferably overnight.

Position rack in upper third of oven and preheat to 425 degrees.

Place shrimp on baking sheet and bake, turning once until golden brown, about 3-4 minutes per side.
