It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is CHILES RELLENOS CASSEROLE!
I love chiles rellenos! But, honestly, I’m too lazy to prepare them singularly. Throwing all of those magnificent flavors together in a casserole dish though? Bueno! This recipe calls for pork sausage and beef, but you could certainly use chicken instead. So delicious!

CHILES RELLENOS CASSEROLE
[Serves 6-8]
½ lb. ground beef
½ lb. ground pork sausage
1 medium onion, chopped
1 garlic clove, pressed
2 (4.5 oz) cans chopped green chilis
2 cups (8 oz.) shredded cheese, divided
4 large eggs
¼ cup flour
½ tsp. salt
¼ to ½ tsp. hot sauce
1 ¼ cups milk
Cook ground beef, sausage, onion and garlic in large skillet. Drain well. Spread 1 can chopped green chilis on bottom of lightly greased 8-inch square baking dish, sprinkle with 1 cup cheese. Spoon meat mixture over cheese layer. Top with remaining chilis and cheese. Whisk together eggs, flour, salt, hot sauce and milk. Pour over casserole. Bake at 350 degrees, 45 minutes. Let stand 10 minutes before serving.

I like Chile Rellenos but I have never made them as a casserole, this recipe sounds delicious and alot easier and faster to make. Thank you so much for sharing your recipe. Have a great weekend and stay safe.
I love them, as well, but I’ve become so lazy in the kitchen lately. I love having a recipe that allows me to have my rellenos and eat them, too. LOL
