LAZY GIRL’S PUMPKIN PANCAKES RECIPE
[Adapted from Betty Crocker]

Ingredients:

2 1/3 cup baking mix, like Bisquick
1/3 cup canned pumpkin (NOT pumpkin pie mix)
1 1/4 cup milk
1/4 cup vegetable oil
1/2 teaspoon ground cinnamon

1/4 teaspoon each ground nutmeg and ginger (or use a teaspoon of pumpkin pie spice instead of the cinnamon, nutmeg, and ginger)

2 eggs
2 tablespoons sugar
Optional: pancake syrup

Heat a griddle or skillet over medium heat or to 375 degrees F. Grease griddle with vegetable oil if necessary. In a medium bowl, combine all the pancake ingredients until well blended. For each pancake, pour slightly less than 1/4 cup batter onto the hot griddle. Cook until edges are dry. Flip and cook the other side until golden brown. Serve with pancake syrup if desired.

Cook’s Note: I have left out the sugar and they came out fine. I also don’t use pancake syrup because to my taste they’re sweet enough without it.
