It’s been so hot all across the country and just thinking about cooking and heating up the house is NOT appealing. This salad is quick, easy, and so versatile. It can be used as a side dish at a BBQ or, with just a few added ingredients, you can make it a full meal, limited only by your imagination!

When I went searching through my recipes to find something to share, I came across one that I hadn’t thought of in ages. I must make it this weekend. 🙂 It’s good for you, delicious, and can be made ahead of time. In fact, the marinating is crucial.
