Karen’s Killer Fixin’s: Chocolate Turtle Cheesecake

It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I can generally pass up cake, even pie, but cheesecake? Not hardly, as John Wayne, The Duke, would say! I haven’t met a cheesecake I didn’t like. And, if it’s easy and quick to prepare, even better. I don’t like to wait too long when I get a craving for cheesecake.

Karen’s Killer Fixin’s: Crockpot Stuffed Flank Steak

I love flank steak but it can be time-consuming to cook by conventional methods. Throwing it into the crockpot is a wonderful idea. This recipe is really tender when you serve it, the gravy is savory, and it goes well with baby potatoes or rice.

Karen’s Killer Fixin’s: Bacon-wrapped Catfish

It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. A cookie or baked item. Candy. Salads. Whatever strikes my eye and fancy…which today is BACON-WRAPPED CATFISH!

I used to fish a lot (long time ago) and loved catching catfish because the meat is solid and not fishy. However, I haven’t been fishing in forever so I have to get my “catch” from the freezer section at the grocery store. Fresh or frozen, this recipe is a treat. How can you go wrong with BACON?! Yeah, yeah, I know I have a problem. Everything’s better with bacon. 🙂 Still, next time you get some catfish in your kitchen, you might want to give this one a try.

Karen’s Killer Fixin’s: Garlic Pork Chops

It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. A cookie or baked item. Candy. Salads. Whatever strikes my eye and fancy…which today is GARLIC PORK CHOPS!

Yes, you have to turn on the oven so this might be better served when the weather is cooler. However, 25 minutes shouldn’t heat up your house too much if you’ve got a hankering for something different and EASY. Serve with cheesy, garlic mashed potatoes or a spinach salad. I keep several packages of this soup mix in the cupboard. This one’s great for throwing together at the last minute, even if it means you throw frozen chops into water to quick thaw. No, ahem, I’ve never done this before. 😉

Karen’s Killer Fixin’s: Shortbread Cookies

I haven’t made these cookies in forever but now that I’ve come across the recipe again, I’m going to have to make some. I found this recipe when my children were young. They were great cookies for the littlest ones, especially when they were teething. They are delicious and practically melt in your mouth. I recommend making a double batch. They’re THAT good!

Even though the children are all gone, I still make family-sized batches of this flavorful chicken stew. It’s so easy to just throw it into the crockpot and have a full meal available at dinnertime. My husband likes it so much, he takes leftovers to work for his lunches. It’s even better after steeping in its own juices overnight. 🙂

If you love seafood, crab cakes are always a winner. It rates right up there with clam chowder, and I get both whenever I can. 🙂 When you can make your own crab cakes at home, win win! This is a savory and easy recipe you’re going to love.

Wow! I’ve now shared 300+ recipes with you and it’s only fitting that we celebrate this milestone with cake! You can’t have cake without frosting (well, maybe that’s just me) so you’re getting a bonus recipe today so we can have our cake and eat it, too. 🙂 I love this recipe. If you’ve been around as long as I have, you’ll remember the chocolate mayonnaise cake that grandma used to make. For those who’ve lost those recipes, this is the recipe I’ve used forever. It’s super moist, chocolate heaven!

I’m always looking for different ways to make chicken. We love it and it’s the least expensive meat these days. (Whatever happened to hamburger as the “savings” meat?!) Anyhoo, I got creative one night and dinner was such a hit, the recipe has found a permanent home in my cookbook. I make it often. If you love easy and savory, this recipe’s for you. Keep the supplies in your pantry and it’s a great, last minute meal.

Do you know what’s even better than mint cookies? Double mint cookies with frosting! My favorite Girl Scout cookies are the mint but, unless you have Girl Scouts on tap year round, that craving can grow to monumental proportions. These double cookies can be made anytime. Yeah, takes a bit more work but WORTH THE TROUBLE!!
